Why? It comes down to trade policy according to ” The Economist”. In 2025, the U.S. withdrew from the Tomato Suspension Agreement — yes, that’s a real thing — and a 17% levy now applies to tomatoes exported from Mexico. That matters because Mexico supplies the vast majority of fresh tomatoes sold in American grocery stores. With that pipeline taxed, prices have shot up fast. You may even notice your favorite restaurant quietly dropping them from the menu to cut costs.
Unlike eggs, tomatoes do not require livestock. You can grow them in a garden, in a pot by a sunny window, or anywhere with good sunlight. The power is literally in your hands.

Couscous with tomato & cucumber
A family recipe — origin unknown, credit shared freely
Dressing
- 1 garlic clove
- 1 tsp dried oregano
- ½ tsp kosher salt
- ¼ tsp pepper
- ½ cup olive oil
- ½ cup lemon juice
- Chives to taste
Bowl
- 2 cups pearl couscous
- Cucumbers, sliced into semi-circles or cubed
- Tomatoes, cut into bite-sized pieces
Method
Whisk together all dressing ingredients in a medium bowl.
Cook couscous according to package directions.
Add warm couscous to the bowl with the whisked dressing. Stir well to coat.
Fold in tomatoes and cucumbers. Refrigerate for 2 hours or overnight.
Serve cold — at home or outside with friends.
